Produce Pick of the Month: Sweet Potatoes

There are few foods I love more than  the humble sweet potato but this wasn't always so. Growing up I was not a particularly picky eater. I had my list of won't-eat-it foods which included peas, bananas, and all forms of squash. To me the sticky orange glop my mother served at Thanksgiving counted as pumpkin since it was orange and since no one would give me just the marshmallows I spent the better part of my life turning my nose up at 'em.
I honestly can't recall what made me decide to try them again. I vaguely recall a family Thanksgiving when I visited my dying great-grandfather having something to do with it. Vegetarian meals with my family can be tricky to navigate but the seed of love was planted. Now one of my favorite meals is salmon and sweet potatoes. Giving them up for gestational diabetes during my pregnancy with the tot was hell.

As we're starting the season of holiday feasting why not make sweet potatoes your produce pick. But first you need to know the basics... the Difference Between Sweet Potatoes and Yams. This was a source of much discussion over Thanksgiving dinner with my in-laws once I decided to request mom's Candied Yams and Sweet Potatoes recipe to share.

What earns sweet potatoes my Produce Pick of the Month feature is that they're are filled with good carbs, high in beta-carotine, vitamins C and B6, but more importantly they're an exceptional source of fiber. They're easy to prepare, store well, and kids tend to like them. Unless they're me circa 1987.

 To celebrate the beauty of Sweet Potatoes I snooped around the web looking for recipes that are kid friendly but you should check the frozen foods section of your favorite grocer for frozen sweet potato fries too. They're a staple in my freezer 'cause they make a great side with grilled meats or chicken nuggets when we're in a hurry.
